Alison O’Neill (The Yorkshire Shepherdess) rhubarb fool with shortbread biscuits recipe on This Morning

Alison O’Neill (The Yorkshire Shepherdess) served up a delicious rhubarb fool with shortbread biscuits on This Morning.

The ingredients are: 450g rhubarb, cut roughly into chunks, 5 tbsp golden caster sugar, 300ml whipping or double cream, 100ml Greek yogurt and small bunch of mint, to decorate.

For the shortbread: 225g plain flour, 150g butter and 75g golden caster sugar, plus a little extra to sprinkle.
