Simon Rimmer Blueberry and Bacon Scones recipe on Sunday Brunch

Simon Rimmer served up delicious Blueberry and Bacon Scones on Sunday Brunch.

The ingredients are: 100g sugar, 2 tsp baking powder, half tsp bicarb, pinch sea salt, 375g flour, 125g butter, 1 egg, 150ml sour cream, 150ml cream, 100g blueberries, 100g very crispy smoked streaky bacon, chopped and glaze with extra cream and 2 tbsp demerara sugar.

Serve hot with butter and peanut butter.
