Sweet Corn Soup with Crab and soured cream recipe on James Martin: Home Comforts

James martin makes a quick sweet corn soup in less than 10 minutes on James Martin Home Comforts.

To make his soup, James used: a tin of sweetcorn, nob of butter, 1 shallot, small amount of water, tin crab meat, pinch of medium curry powder, wine, double cream, salt and pepper to taste.

To prepare the soup:

Chop the shallot and fry in the butter.

Add the curry powder and fry for a minute then add the sweet corn, wine, water (just enough to cover the sweet corn), and double cream.

Season well then bring to the boil.

Put the soup in a blender and blend until smooth.

Pour the contents back into the pan and add the crab meat.

Heat through for a minute or two and you are ready to serve.

The soup can be served with crème fraiche and a drizzle of oil if desired.
