Pavlova with Raspberry and Caramel by James Martin on Home Comforts

James Martin kicks of his new series of James Martin Home Comforts with a raspberry and caramel pavlova.

James says: “Making the meringue takes time, but it can be made in advance ready to construct the pavlova at the last minute.”

To make his meringue (cold meringue), James whips egg whites for five minutes before gradually adding 50g caster sugar per egg white.
