John Waite returns to the This Morning kitchen to serve up a Passion fruit Meringue Pie for Valentine’s Day.
John says his dessert is a nice and light treat and is perfect for sharing with your love one on the special day.
John used a blind baked pastry shell as the base for his dessert and mixed double cream, sugar, eggs and passion fruit for his filling.
To make the meringue topping you will need: 120g caster sugar and 2 egg whites.
Place the sugar and egg whites in a bowl of your stand mixer and set over a pan on simmering water. Whisk the mixture over the heat until the mixture reaches 170F/76C and the sugar has melted.
Transfer the bowl to your mixer with the whisk attached and whisk on high speed for about 15 minutes until the meringue is glossy and has reached stiff peaks.
