Simon Rimmer Mutabaq with mozzarella and pistachio nuts recipe on Sunday Brunch

Simon Rimmer served up delicious Saudi Arabian Mutabaq with mozzarella cheese and pistachios on Sunday Brunch.

The ingredients are: 36 sheets filo (3x270g packs), 200mm square, 250g melted butter, 500g ricotta, drained and 250g grated mozzarella.

For the syrup: 300g sugar, 125ml water, 3 cardamom pods, Juice and zest 1 lime, 5ml orange blossom water and crushed pistachios.
