Simon Rimmer served up Mackerel With Cucumber And Seaweed on Sunday Brunch.

The ingredients are: 4 x mackerel fillets, oil to fry, 2 cucumbers cut into deseeded half moons, 1 tsp chilli flakes, 30g seaweed, 10g snipped chives and 1 tsp sesame seeds.

For the dressing: 20g Dijon mustard, juice and zest 1 lemon, 80ml extra virgin olive oil and 20ml seaweed oil.
