Simon Rimmer watermelon and feta salad recipe on Sunday Brunch

Simon Rimmer served up a tasty watermelon and feta salad on Sunday Brunch.

The ingredients are: 1 cucumber, 250g feta cheese, cut into cubes, about 24 kalamata olives, handful rocket leaves and ½ watermelon, cut into wedges.

For the dressing: 100ml cider vinegar, 2.5cm piece fresh ginger, grated, 2 tbsp chopped fresh mint, 1 lime, juice only, 300ml extra virgin olive oil, salt and freshly ground black pepper and warm pitta bread, to serve.
