Paul Hollywood fruit turnovers with apricot and raspberries recipe on The Great Celebrity Bake Off

Paul Hollywood showcased his fruit turnovers with apricot and raspberries on The Great Celebrity Bake Off Stand Up to cancer. Paul provided the recipe to the celebrities for this week’s technical challenge.

The celebs in the tent baking to raise funds for cancer research were: Lee Mack, Griff Rhys Jones, Melanie Sykes and Joe Lycett.

The ingredients for the rough puff pastry are: 300g all purpose flour, plus extra for dusting, pinch of salt, 50g butter, chilled and cut into cubes, 6-8 tbsp water, 120g butter, frozen and 1 egg, beaten, to glaze.

For the filling: 410g can apricot halves, drained, 15g caster sugar, ½ tsp almond extract, 2 tbsp cornflour, juice of 1 small lemon and 24 raspberries.

For the icing: 100g icing sugar, sifted and juice of ½ – 1 small lemon.
