Phil Vickery served up a tasty one pot garlic simmered chicken with roast potatoes dish that is packed full of goodness on This Morning.
the ingredients are: 8 large chicken thighs, skin removed, but bone still in, 2 medium onions, peeled and roughly chopped, 1 x 10g good quality chicken stock cubes, 4 cloves garlic, peeled and roughly chopped, Water, 150g frozen peas, 150g mange tout, 75g fine beans, cut into 2cm pieces, 1 small head broccoli, broken into small florets, 1 small 100g bag fresh spinach, 6 tbsp low calorie mayonnaise, 2 cloves garlic, crushed finely, 4 tbsp chopped coriander or parsley or both, really up to you, Pinch 2 black pepper and Pinch paprika.
