Mary Berry serve up tasty oven roasted vegetables with mint, basil and feta cheese on Classic Marry Berry.
The ingredients are: 2 small or 1 large aubergine, halved and cut into 15mm slices, 350g peeled butternut squash, cut into 2cm cubes, 2 medium courgettes, halved and cut into 1cm slices, 2 large red peppers, seeds removed, cut into large 4cm pieces, 4 tbsp olive oil, salt and freshly ground black pepper.
For the dressing: 2 tbsp balsamic vinegar, 4 tbsp olive oil, 1 tsp caster sugar, 1 heaped tsp grainy mustard, 1 banana shallot, finely chopped and 1 garlic clove, crushed.
To serve: 100g feta, crumbled (optional), 2 tbsp chopped mint and 2 tbsp chopped basil.
