Tom Kerridge served up tasty griddled vegetables and halloumi salad with couscous and a herb no oil dressing on Tom Kerridge’s Lose Weight For Good.
The ingredients are: 150g couscous, 150ml hot fresh vegetable stock, 1 each red, yellow and green pepper, cored, seeds removed, cut into 2cm slices, 1 large red onion, cut into wedges, 1 courgette, sliced into thick rounds, olive oil spray, 250g block halloumi, sea salt and freshly ground black pepper, For the herb dressing, 2 tbsp red wine vinegar, 1 tsp garlic powder, ½ tsp dried herbes de Provence, ½ tsp dried Italian herb mix, 1 tsp granulated sweetener, 1 tsp sea salt flakes, 1 tbsp cornflour, mixed to a paste with 1 tbsp water and 2 tbsp finely chopped flatleaf parsley leaves.
To finish (optional): basil and mint leaves and 1 red chilli, seeds removed, sliced on an angle.
