Tom Kerridge low calorie pulled pork tacos with pickled onions recipe

Tom Kerridge served up tasty low calorie pulled pork tacos with oranges, chipotle paste and pickled pink onions on Tom Kerridge’s Lose Weight For Good.

The ingredients for the marinade: 100g chipotle paste, 2 tbsp tomato puree, 3 tbsp cider vinegar, 2 oranges, juice only, 2 garlic cloves, grated, 2 tsp dried oregano, 1 tsp sea salt flakes, 1 tsp ground nutmeg, 1 tsp ground allspice, 1 tsp hot smoked paprika and 1 tsp ground cumin.

For the pork: 1.8kg trimmed joint boneless pork shoulder (fat removed).

For the pickled pink onions: 2 red onions, thinly sliced, 1 tsp sea salt flakes, ½ tsp dried oregano, ½ tsp cumin seeds, lightly crushed, 2 tbsp cider vinegar and 1 lime, juice only.

To serve: 8 medium corn tortillas, sunflower oil spray, 1 iceberg lettuce, shredded, 400g fresh tomatoes, finely chopped and 2 handfuls coriander leaves.
