Tom Kerridge served up tasty low calorie sweet potato with black bean and walnuts burritos on Tom Kerridge’s Lose Weight For Good.
Each serving provides 685 kcal.
The ingredients are: 700g sweet potatoes (3 medium), 2 x 400g tins black beans, rinsed and drained, 50g walnuts, toasted, 2 tsp hot smoked paprika, 1 tsp dried Italian herb mix, 1 tsp garlic powder, 1 tsp onion powder, sea salt and freshly ground black pepper.
For the chipotle yoghurt: 2 tsp chipotle paste and 100g 0% fat Greek-style yoghurt, or similar dairy-free alternative.
To assemble: 4 large corn (or wheat) tortillas, 100g iceberg lettuce, shredded, 200g carrots, peeled and grated, 200g raw beetroot, peeled and grated and 1 ripe, small avocado, peeled and quartered.
