Rick Stein Mexican chilaquiles with fried eggs and tortilla chips recipe

Rick Stein served up Mexican chilaquiles with fried eggs and tortilla chips for breakfast on Rick Stein’s Road To Mexico.

The ingredients are: ¼ red onion, freshly ground sea salt and black pepper, 1 large flour tortilla, 1 large radish, 6 tsp Pico de Gallo Salsa, 5 tbsp tinned black beans, 1 large egg, 1 small handful fresh coriander, roughly chopped, 1 small avocado, sliced, a splash of light oil, and 1 lime wedge.
