Matt Tebbutt Thai green vegetable curry recipe

Matt Tebbutt served up a tasty Thai green vegetable curry with rice for the Dhillons family on Save Money: Good Food.

The ingredients are: 1 aubergine, 340g courgettes, 110g onion, 50g thumb sized piece of ginger, 3g clove of garlic, 10g green chilli, 1 tin full fat coconut milk, 2tbsp fish sauce, 1 lime, 1 stick of lemongrass, 0.25g kaffir lime leaves, 5g bunch of coriander, 12g tbsp palm sugar and 200g jasmine rice.
