Simon Rimmer served up a delicious apple, maple syrup and pecan cake on today’s episode of Sunday Brunch.
The ingredients are: 150g melted butter, 2 peeled grated apples (sharp like a granny smith works well), 175g soft dark brown sugar, 2 eggs, 225g self-raising flour, 10g baking powder, 10g cinnamon, 5g nutmeg, 1 vanilla pod, 75g chopped pecans and zest 1 lemon.
For the sauce: 125ml pure maple syrup and 30g butter.
