Simon Rimmer served up spiced meringues with berries for a tea time treat on Eat the Week with Iceland.
The ingredients are: 6 Egg Whites, 299g Caster Sugar, 10g Ground Cardamom, 5g Ground Star Anise, 1 Vanilla Pod (Seeds Scraped) and 50ml Pink Food Colouring.
For the fruit: 400g Strawberries (Hulled And Quartered), 400g Raspberries, 150g Blueberries, 150g Icing Sugar, 1 Orange (Zest And Juice), 1 Vanilla Pod (Seeds Scraped) and 500g Thick Greek Yogurt.
