Spiced Orange Cake with plum sauce on Tom Kerridge Cooks Christmas

Tom Kerridge gave up a promising acting career to become a chef, and judging by his spiced orange cake recipe, he seems to have made the right decision.

Tom says his Christmas treat is a great alternative for everybody that says they don’t like Christmas pudding, but it still tastes like Christmas.

Tom’s cake is also one of the few cake recipes we have seen that does not use butter as an ingredient.

To make his orange cake, Tom put three unpeeled oranges in a pot and covered with cold water, then brought to the boil, and cooked for two hours. After cooking, Tom drains the water from the oranges and, when cooled, he cut each orange in half and removed the seeds.

He chops the oranges finely and put into a food processor.

He then beats 7 eggs and adds 300g sugar, 300g ground almonds, and 2tsp baking powder. He mixes the ingredients before adding 450g of the chopped orange mix.

Tom then pours the cake mixture into a baking tin and baked it for an hour at 160c.

When the cake is baked, Tom removes it from the oven and left it to cool before removing it from the tin.

To make his plum sauce, Tom halves 1.5 kg of plums and removed the stones. He melts 150g of butter in a pan and adds 100g of sugar and a cinnamon stick.

He pours the plums on top and added lemon juice before cooking on a slow heat until a puree is formed.

Finally, he removes the cinnamon stick and blended in a jug blender until smooth.
