Simon Rimmer Banana Pudding with Peanut Butter Cookies recipe on Sunday Brunch

Simon Rimmer served up banana pudding with peanut butter cookies dessert on Sunday Brunch.

The ingredients for the cookies: 100g soft dark brown sugar, 100g granulated sugar, 125g butter, 100g crunchy peanut butter, 5ml vanilla, 1 egg, 85g rolled oats, 60g flour, 2g baking powder, 3g bicarb, 5g ground cinnamon and pinch sea salt.

For the pudding: 500ml whole milk, 100g sugar, 30g flour, 3 yolks, 60g butter, 5ml vanilla, 4 bananas, juice half lemon and 150ml whipped cream mixed with 20g honey.
