The hairy bikers veggie tacos recipe on This Morning

Si and Dave served up Mexican vegetable tacos with refried beans and avocado cream on This Morning.

The ingredients for the refried beans are: 1 tsp vegetable oil, 1 red onion, finely chopped, 2 garlic cloves, finely chopped, 1 tsp dried oregano, 2 x 400g cans of black or pinto beans, drained, 250ml vegetable stock or water, Sea salt and black pepper.

For the veggie filling: 1 tsp vegetable oil, 100g sweetcorn, 1 red pepper, deseeded and cut into strips, 1 red onion, cut into thin wedges, 200g butternut squash or pumpkin, diced, 1 tbsp tomato puree, 1 tsp chipotle paste (or more, depending on how hot you like it) and 100g kale, cavolo nero or chard, shredded.

For the avocado cream: 1 avocado, juice of 1 lime, A few coriander leaves and 2 tbsp half fat crème fraiche or soured cream.

To serve: 8 corn tortillas, ½ red onion, finely chopped and A few coriander leaves and lime wedges.
