Simon Rimmer served up banana rum and raisin cheesecake on Sunday Brunch.
The ingredients are: 150g raisins, 70ml dark rum, 250g crushed crackers, 150g melted butter and 30g sugar.
For the topping: 600g cream cheese, 600g ricotta, 1 vanilla pod, 8 chopped bananas, 150g sugar and 6 eggs.
For the sauce: 100ml cream, 100g butter, 100g soft dark brown sugar and 50ml raisin soaked rum.
