Andrew Smyth served up courgette wrapped cod parcels with potatoes and red pepper sauce on today’s episode of Lorraine.
The ingredients for the potatoes: 800g Jersey Royal potatoes, 30g unsalted butter, Salt and Pepper.
For the fish: 2 courgettes, 4 cod fillets (around 550g) or any firm white fish and 1 tbsp olive oil.
For the Roasted Red Pepper Sauce: 340g jar roasted red peppers (available in the aisle beside stuffed peppers and oils), 5 cloves garlic, crushed, 2 tbsp chopped fresh basil, 3 tbsp olive oil, 300ml single cream and 15g grated Parmesan cheese.
