Nigel Slater almond lentil stew with mushrooms and tomatoes recipe

Nigel Slater served up a whole almond lentil stew with cinnamon, mushrooms and cherry tomatoes on Nigel Slater’s Dish of the Day.

Nigel says: “This is a warm and generous meal that contain no meat and is very cheap and easy to make.”

The ingredients are: 2 tbsp olive oil, plus extra for frying the almonds, 1 carrot, chopped, 1 stalk celery, chopped, 1 onion, chopped, 1 turnip, chopped, 2 garlic cloves, chopped, 150g baby button mushrooms, halved, 250g green lentils, 1.2 litres vegetable stock, 1 bay leaf, 1 sprig rosemary, 4 sprigs thyme, handful almonds, 1 tbsp ground cinnamon and 10 cherry tomatoes, quartered.
