Simon Rimmer served up a spiced carrot cake with cream cheese on Sunday Brunch.
The ingredients are: 200ml veg oil, 4 eggs, 350g sugar, 75g chopped pistachios, 12g baking powder, 10g ground cinnamon, 10g ground cardamom, 10g ground cloves, 5g ground coriander, 5g ground ginger, 300g grated carrot, 250g whole meal flour and 75g sultanas.
For the frosting: 375g full fat cream cheese, 180g icing sugar, 15g ground cardamom and garnish with lime zest, crushed pistachios and physalis.
