Andrew’s Chocolate and coffee fondant fancies on The Great British Bake Off

Andrew served up delicious looking chocolate and coffee fondant fancies on The Great British Bake Off.

The ingredients for the chocolate and coffee genoise are: 5 free-range eggs, 165g caster sugar, 5 tsp coffee extract (or 2 tsp instant espresso powder dissolved in 25ml boiling water, cooled), 150g plain flour, 10g cocoa powder and 40g unsalted butter, melted.

For the Irish cream buttercream: 190g unsalted butter, softened and 375g icing sugar, sifted
2 tbsp Irish cream liqueur.

For the chocolate fondant: 90g dark chocolate (70% cocoa solids), 720g icing sugar, sifted and 40g glucose syrup.

To decorate: 50g white chocolate, melted (optional) and 20 chocolate coffee beans (optional).
