Gino D’Acampo chicken kiev with mash potatoes recipe from the eighties on Let’s Do Lunch

Gino D’Acampo makes chicken kiev served up with potatoes for an eighties supper on Let’s Do Lunch.

The ingredients are: 4 large skinless chicken breasts , with mini fillet attached, 200g toasted breadcrumbs, 3 eggs, beaten, 50g flour, seasoned and 4 tbsp sunflower oil.

For the butter: 3 cloves garlic, finely chopped, 2 tbsp chopped parsley and 100g butter, softened.

For the buttered peas: 300g peas, 25g butter and Salt and pepper.

For the mash: 1 kg maris piper potatoes, peeled and cut into 2 cm chunks, 50g butter, A splash of milk and Salt and pepper.
