Gino Deviled egg salad recipe from the eighties on Let’s Do Lunch

Gino D’Acampo serves up deviled egg salad a popular dish from the eighties on Let’s Do Lunch with Melanie Sykes.

The ingredients are: 2 eggs, hard boiled, 1 tbsp mayonnaise, 1 tsp Dijon mustard, 1 tsp chopped chives, Salt and pepper, Pinch of cayenne, 1/8 of an iceberg lettuce, 3 cm piece cucumber, cut into half moons, 1⁄2 stick of celery and 1⁄4 red pepper diced.

For the dressing: 2 tbsp mayonnaise, Pinch of dried oregano, 1⁄4 garlic clove, grated and Salt and Pepper.

To prepare the dish, peel the eggs and scoop out the yolk into a bowl. Mash it together with the mayonnaise, mustard and chives.

Spoon the egg mayonnaise back into the eggs and sprinkle over a little paprika.

Place the salad ingredients in a serving bowl. Mix together the dressing ingredients, loosening it with a little warm water.

Place the eggs on top of the salad then drizzle over the dressing.
