Nigel Barden cooks courgette and feta fritters with yoghurt on Drivetime with Simon Mayo.

The recipe is taken from Tom Hunt book The Natural Cook: Eating the seasons from root to fruit.

The ingredients are: 200g courgettes, 1 spring onion, finely sliced, 3 sprigs of dill, 9 mint leaves, roughly chopped, 70g feta, crumbled, 1 small egg, lightly beaten, 2 tbsp plain flour, 6 courgette flowers (optional), Light olive oil (Nige used regular olive oil) and 80g Greek yoghurt to serve.
