Si and Dave’s chicken and spinach empanadas with Maggie’s hot sauce, sherry, tomatoes and capers recipe on The Hairy Bikers Go West

Simon King and Dave Myers served up tasty chicken and spinach empanadas with Maggie’s hot sauce, sherry, tomatoes and capers on The Hairy Bikers Go West.

The ingredients for the pastry are: 250g plain flour, ½ tsp baking powder, pinch salt, 50ml olive oil and 50ml white wine or fino sherry.

For the filling: 300g frozen whole-leaf spinach, defrosted and chopped, 1 tbsp olive oil, plus extra for brushing, 1 red onion, finely chopped, ½ green pepper, finely chopped, 2 garlic cloves, finely chopped, 1 large tomato, chopped, 250g cooked chicken, chopped into small pieces, 1 lemon, zest and juice only, 1 tsp ground allspice, ½ tsp cinnamon, handful flatleaf parsley, finely chopped, 3 large sprigs mint, leaves picked and finely chopped and 25g capers.
