Shivi Ramoutar North African-chicken traybake with harissa and couscous recipe

Shivi Ramoutar served up a tasty North African-chicken traybake with harissa and couscous on Oti Mabuse’s Breakfast Show.

The ingredients for the chicken are: 2 onions, peeled and quartered, 6 garlic cloves, unpeeled, smashed, 4 preserved lemons, quartered, 1/2 small jar of pitted green olives (about 150g), 8 chicken pieces (thighs or drumsticks), bone-in, skin-on, 4 tbsp extra-virgin olive oil, 1 heaped tbsp rose harissa paste and 100ml chicken stock.
