Nathan Anthony slow cooker Thai mango chicken curry recipe on Steph’s Packed Lunch

Nathan Anthony served up a tasty slow cooker Thai mango chicken curry using a recipe from his book ‘Board of Lunch’ on Steph’s Packed Lunch.

The ingredients are: 3 chicken breasts, sliced, 400ml tin of reduced-fat coconut milk, 1 red chilli, sliced with seeds, 1 large mango, peeled and chopped, 1tbsp mango chutney, 1 onion, peeled and sliced, 4 garlic cloves, peeled and chopped, 2.5cm fresh ginger, peeled and grated, Handful of fresh coriander, chopped, 1–2 tbsp curry powder, 2tbsp soy sauce, Juice of 1 lime, plus 1 slice, 1tbsp cornflour, mixed to a paste with 1 tbsp water, 1 yellow pepper, sliced and Salt and pepper, to taste.

To serve: steamed basmati rice and Flatbreads.
