Freddy Forster Thai green fish curry recipe on Steph’s Packed Lunch

Freddy Forster served up a tasty Thai green fish curry with rice for a fiver on Steph’s Packed Lunch.

The ingredients are: 1 small onion, peeled and roughly diced, 1 garlic clove, peeled and finely sliced, 2tbsp sunflower oil, 1 large potato, peeled and cut into medium chunks, 1tbsp Thai green curry paste, 500ml Coconut milk, 200ml water, 1tbsp Thai Fish Sauce, 280g assorted frozen mix seafood, 1 kaffir lime leaf, 50g frozen Spinach, roughly chopped, 2tbsp or 30g frozen shrimps/prawns, 1tbsp coriander leaves and 1tsp red chilli, finely sliced.

For the Fragrant Rice: 300g jasmine Rice, 550ml boiling water, Pinch of salt, 3tbsp soy sauce, ½ tbsp sesame oil, 2tbsp sesame seeds, lightly toasted (optional) and 3 sticks of spring onions, finely sliced.
