Nelsandro Farmhouse Christmas pops cake recipe on Steph’s Packed Lunch

Nelsandro Farmhouse from The Great British Bake Off, served up delicious Christmas pops cake on Steph’s Packed Lunch.

The ingredients for the sponge are: 220g baking margarine, 220g caster sugar, 220g plain flour, 1tsp baking powder, 4 medium free-range eggs and 1tsp vanilla bean paste.

For the buttercream: 250g unsalted butter, 500g icing sugar, 1tsp vanilla bean paste, 2tbsp whole milk and Food colouring of choice.

For the chocolate coating: 500g milk or dark chocolate.

For the decoration: Cake pop sticks (or toothpicks), 100g raisins, 100g dried apricots, 1 small packet crushed hazelnuts, 1 small packet mixed nuts, 1 small tub chocolate shavings and 1 packet Christmas sprinkle.
