Freddy Forster served up tasty chilli beef stuffed aubergines on Steph’s Packed Lunch.
The ingredients are: 1 aubergine, Salt, to season and 2tbsp olive Oil.
For the chilli beef: 300g minced beef, 2tbsp vegetable oil, ½ small onion, peeled and finely chopped, ½ clove garlic, peeled and finely chopped, ½ tbsp tomato puree, 50ml red wine, optional, 6tbsp tinned chopped tomatoes, 150ml beef stock, ½ tsp chilli flakes, 1tsp freshly chopped chilli, seeds removed and 2tbsp tinned red kidney beans, drained.
For the cheesy crust: 2tbsp panko breadcrumbs, 120g grated fontina cheese and 1tbsp chives, finely chopped.
