Simon Rimmer coconut with lime and pineapple loaf recipe on Sunday Brunch

Simon Rimmer served up a delicious coconut with lime and pineapple loaf on Sunday Brunch.

The ingredients are: 200g butter, 200g sugar, Tsp vanilla paste, Zest and juice 2 limes, 2 eggs, 125ml sour cream, 150g flour, Tsp baking powder, 90g grated coconut cream block and 90g chopped tinned pineapple.

For the icing: 300g icing sugar and 75ml pineapple juice.
