Jane Baxter beetroot curry with coconut, green chiilies and pilau rice recipe on Matt Tebbutt’s Go Veggie and Vegan

Jane Baxter served up a tasty beetroot curry with coconut, green chillies and pilau rice on Matt Tebbutt’s Go Veggie and Vegan.

The ingredients are: 3 large beetroots peeled, 2 tbsp coconut oil, 1 tbsp mustard seeds, 2 tsp cumin seeds, 20 curry leaves, 1 tbsp urad dal, 2 cloves garlic, grated, 1 x 2 cm piece ginger, peeled and grated, 2 green chillies finely chopped, 1 red onion sliced, pinch ground turmeric, pinch asafoetida, 3 tbsp grated coconut, pinch sugar, salt and pepper, 2 tbsp chopped coriander.

For the rice: 200g Basmati rice, soaked and rinsed, 1 tbsp veg oil, 1 onion, chopped, 1 bay leaf, ¼ tsp ground cardamom, ¼ tsp ground cloves, 400ml boiling water and Pinch of salt.
