Clodagh Mckenna serve up a tasty summer Italian minestrone soup with celery, cherry tomatoes and chickpeas on This Morning.

The ingredients are: 2 tbsp olive oil, 1 onion, finely chopped, 2 carrots, peeled and finely chopped, 1 stalk celery, finely chopped, 1 leek, finely chopped, 2 cloves garlic, crushed, 1 tbsp tomato puree, 800ml hot vegetable stock, 400g chickpeas / butter beans, drained and rinsed, 400g tin of good-quality tomatoes, 2 tsp of dried oregano, Handful of baby spinach, Sea salt and freshly ground black pepper.

To serve: Grated Parmesan cheese.
