Ainsley Harriott served up a delicious lemon and coconut meringue pie on Ainsley’s Food We Love.
The ingredients for the pastry: 200g plain flour, 100g butter, chilled, cubed, 2 tbsp icing sugar, 1 large egg, 2 tbsp cold water, 1 egg yolk, beaten with 1 tsp milk.
For the filling: 400ml water, 3 lemons, zest and juice, 45g cornflour, slaked with cold water, 150g caster sugar, 3 egg yolks and 50g unsalted butter.
For the meringue: 3 egg whites, 150g caster sugar and 15g desiccated coconut.
