Simon Rimmer served up a tasty chicken and Mango Salad on Sunday Brunch.
The ingredients are: 3 x chicken breasts, cut into 4 long strips.
For the marinade: 100g yoghurt, Juice and zest 1 lime, 10g smoked paprika, 5g garlic powder and 5g ground cumin.
For the salsa: 1 mango, diced, Half red onion, finely diced, 8 tomatoes, deseeded and diced, 1 red chilli, finely diced and 1 cucumber, deseeded and diced.
For the salad: Handful each of watercress, rocket and mizuna leaves, Olive oil, Salt and pepper, 100g toasted cashews and 100ml yoghurt, let down with approximately 30ml water.
