John Whaite’s salmon burger with apple salsa recipe on Lorraine

John Whaite served up tasty salmon burgers with apple salsa on today’s episode of Lorraine.

The ingredients for the burgers are: 500g skinless, boneless salmon fillets, roughly chopped, 1cm piece fresh ginger, minced/finely grated, 3 spring onions, very finely sliced, salt and pepper.

For the apple salsa: 1 Braeburn apple, very finely diced, 1 fat red chilli, very finely chopped, ½ cucumber, very finely diced, Juice of 1 lime and Small handful fresh coriander leaves, finely chopped.

For the wasabi mayonnaise: 100g mayonnaise, 50g Greek yoghurt and 2tsp wasabi or horseradish paste, or to taste.

To serve: Brioche buns and Salad leaves of choice, to serve (the slight bitterness of lamb’s lettuce works well).
