Nigel Barden served up a tasty barbecued John Dory (Saint Peters fish) with green sauce and chicory dish on Radio 2 Drivetime.
The ingredients are: 1 John Dory, about 2kg, or 2 smaller 1kg fish (head removed, trimmed, scaled and gutted), 4 heads of chicory, trimmed and leaves separated, Olive oil, for cooking, Cornish sea salt and freshly ground black pepper.
For the Spice Rub: 1 tbsp fennel seeds, 1 tbsp black peppercorns, 1 tbsp coriander seeds and 1 tbsp sea salt.
For the Green Sauce: 3 garlic cloves, peeled & roughly chopped, 2 tbsps capers in vinegar, drained, 6 good-quality salted anchovies, 2 large gherkins, a handful rocket leaves, a handful flat-leaf parsley, 1Ž2 handful mint, 1 tbsp red wine vinegar, 1 tbsp English mustard and 100ml extra virgin olive oil.
