Tom Kerridge served up tasty homemade chicken gravy using professional chef’s techniques on the Food Detectives.
Tom says: “The key to making good gravy is to use the contents of the tray after the chicken is roasted, removed and left to rest.”
The ingredients to add to the tray after roasting include: 2 tbsp plain flour, chicken stock, bunch of thyme sprigs, sliced button mushrooms, banana shallots (skin left on) and a little splash of white wine.
