Dean Edwards roasted Mediterranean pasta recipe on Lorraine

Dean Edwards served up a tasty roasted Mediterranean pasta dish on today’s episode of Lorraine.

The ingredients for the tomato sauce are: 400g cherry tomatoes, halved, 1 red onion, quartered, Few sprigs fresh thyme, leaves picked, Olive oil for drizzling and 2 tbsp balsamic vinegar.

Vegetable Pasta: 1 red onion, quartered, 2 courgettes, sliced into thick chunks, 1 green pepper, deseeded and chopped, 4 cloves garlic, skin on, Drizzle olive oil, Salt and ground black pepper, 320g whole-wheat tagliatelle or spaghetti, cooked according to pack instructions, 75g reduced fat mozzarella, torn into pieces and Small bunch fresh basil.
