Nigel Barden served up a tasty slow-cooked pulled Irish beef brisket with beer and chipotle paste on Radio 2 Drivetime with Simon Mayo.
The ingredients are: 2kg piece of beef brisket, on the bone.
For the Marinade: 6 tbsp tomato puree, 2 tbsp chipotle paste, 330ml beer, 2 tbsp wine vinegar, 2 tbsp Worcestershire sauce, 2 tbsp honey, or maple syrup, 2 tbsp Dijon Mustard, small bunch of thyme, 4 cloves of garlic, smashed, freshly ground black pepper and sea salt.
Nigel served his brisket with sweet potato wedges and red slaw.
