Clodagh McKenna Irish Soda Bread Ice Cream Recipe on Sunday Brunch

Clodagh McKenna made delicious Irish soda bread with soda bread ice cream on Sunday Brunch with Simon Rimmer and Tim Lovejoy.

the ingredients are: 550g wholemeal flour, 350g white flour, 1 tsp of bicarbonate of soda, 1 tsp of salt, 400ml milk and 200ml natural yoghurt.

For brushing: 50ml milk and 1 egg.

For the Baileys soda bread ice cream (makes 600ml): 150g soda breadcrumbs (the bread should be at least 1 day old), 80g soft brown sugar, 250ml milk, 250ml double cream, 150g granulated sugar, 1 vanilla pod, 5 free-range egg yolks and 80ml Baileys Irish Cream liqueur.
