John Whaite’s fairy muffins recipe on Lorraine

John Whaite made delicious fruity meringue fairy muffins on today’s episode of Lorraine.

The ingredients are: 225g self raising flour, 1 tsp bicarbonate of soda, 150g caster sugar, Zest of 2 lemons, 100ml lemonade, 125ml whole milk, 2 large eggs and 125ml sunflower oil.

For the filling: 12 tsp lemon or passion fruit curd, 4 large egg whites and 225g caster sugar.
