Mary Berry served up a tasty and warming roasted Mexican tortilla bake on Mary Berry’s Foolproof Cooking.
Mary says: “This all-in-one dish is so quick to make. Think Mexican lasagne using ready-made tortillas instead of sheets of pasta. Utterly delicious and very moreish!”
The ingredients for the mince are: 1 tbsp olive oil, 2 large onions, chopped, 500g beef mince, 1 mild red chilli, deseeded and finely chopped, 1 red pepper, deseeded and diced, 2 garlic cloves, crushed, 1 tbsp ground cumin, 1 tbsp ground coriander, 2 tbsp tomato purée, 1–2 tbsp mango chutney, 2 x 400g tins chopped tomatoes, 1 small bunch fresh coriander, chopped and salt and freshly ground black pepper.
To assemble: 3 large tortilla wraps, 250g full-fat mascarpone, 100g mozzarella, grated and 100g cheddar.
