James Martin served up delicious peaches with elderflower pressé jelly and strawberry ice cream dessert on James Martin: Home Comforts.
The ingredients for the strawberry ice cream: 500g strawberries, hulls removed, 300ml extra-thick double cream and ½ vanilla pod, seeds scraped out with a sharp knife.
For the elderflower jelly: 450ml sparkling elderflower pressé, 50g caster sugar and 5 gelatine sheets, soaked in cold water for 5 minutes.
To serve: 1 peach, stone removed, flesh finely diced, 50g small fresh strawberries, cut into quarters and small handful fresh basil leaves, preferably Greek basil.
