Dean’s vegetable packed barley broth recipe on Lorraine

Dean Edward served up a tasty vegetable packed barley soup that is warming on a cold winter’s day on today’s episode of Lorraine.

The ingredients are: 2 onions, diced, 2 large carrots, small diced, ½ head celeriac, small diced, 1 tbsp oil, 3 cloves garlic, crushed, 1 tbsp fresh rosemary, chopped, 1 heaped tsp smoked paprika, 150g pearl barley, 500g carton tomato passata, 1 tbsp tomato puree, 1 litre vegetable stock and 200g kale or winter greens, shredded.

For the croutons: 1 wholemeal roll, cut into cubes and 1 tbsp olive oil.
